What you have to do is time the starting right while shifting the gear from nuetural into first gear. To do that, right when the countdown begins, press the brake, then the gas. Now right before the guy says GO, press the brake again then the gas and you should have a quick start. If not, keep practicing, the timing can be hard at first but is easy after you get the hang of it.

While coming up to a turn, tap the emergancy brake while turning, and the car will start to drift.
